  • ½ cupchopped English cucumber
  • ¼ cupfinely chopped red onion
  • ½ cupcherry tomatoes, quartered
  • ½ cupcanned artichoke hearts, chopped
  • ¼ cupKalamata olives, chopped
  • ⅓ cupcrumbled feta cheese
  • 1handful fresh parsley or dill, chopped
  • Olive oil, for drizzling
  • Pita chips made with whole wheat pitas, for serving

Instructions

  1. Prepare the vegetables as noted above.
