The Balkan Grill is hidden in a very small space in one of the charming passages between Getreidegasse and Universitätsplatz. The "Bosna" prepared there has enjoyed cult status for a long time.
Cult sausage made in Austria
A unique sausage speciality started its culinary success story at Salzburg's Balkan Grill and has long since become an Austrian classic – although it actually comes from Bulgaria: the "Bosna", a kind of hot dog. It consists of grilled pork sausages that are placed between two slices of white bread with onions and fresh parsley as well as a secret spice mixture.
Worldwide success from Müllnerbräu
Salzburg has the Bulgarian Zanko Todoroff to thank for the "Bosna": in 1949 he prepared a bratwurst in the Müller Bräustübl according to his secret recipe. Thanks to its delicious flavour, it quickly became a well-known delicacy in the city. Soon Todoroff was able to afford his own snack stand, the Balkan Grill. The small stand in the Stockhamer Durchhaus, a passage between Universitätsplatz and Getreidegasse has long since achieved cult status and has even found its way into Asian travel guides. No wonder, then, that numerous Far Eastern guests also join the colourful crowd at the tiny window of the restaurant.
Product range: bosna in different variations (e.g. original, onion, parsley, spice or onions, ketchup, spice with mustard, spice etc.).
Special feature: the special style of the take-away window in the courtyard is unique.

Two long, thin pork bratwursts in an elongated bun of white bread, slightly toasted, served half wrapped in white paper, with final finishing touches including parsley, onions and a secret blend of spices – this is the basis of the legendary Bosna.
The most dominant influence is that of the Ottoman, but Balkan food carries traces from Austria, Croatia, and Italy as well. Balkan cuisine has features that make it all the more appealing, such as filling of vegetables, stewing of meat, and having delicious pastries as appetizers.
Coming out of Serbia, Croatia, Bosnia and Herzegovina areas this 3 meat patty has gained notoriety all across the world with no stop in sight. Chicago, New York, and Johannesburg have all become big fans of this sandwich. Because the Lepina bread is practically a foot across this recipe only makes two patties.
Balkan cuisine is characterised by very diverse, strong and spicy food. Pickled vegetables and small hot peppers are common ingredients, with peppers appearing in ajvar spread. Feta cheese is also a popular ingredient.
The two which have had the most influence on food were the Ottomans and the Austro-Hungarians. Meanwhile, geographical influence in Balkan style and method(s) of cooking came from Eastern European and Mediterranean cuisines.
The word Balkan is Turkish and means “mountain,” and the peninsula is certainly dominated by this type of landform, especially in the west. The Balkan Mountains lie east-west across Bulgaria, the Rhodope Mountains extend along the Greek-Bulgarian border, and the Dinaric range extends down the Adriatic coast to Albania.
