Crock-Pot Keto Pot Roast Recipe (Mississippi Style)

My family loves pot roast. It’s such a yummy filling comfort food. Since I stay home with our four kids, slow cooker recipes that I can start in the morning and forget about the rest of the day make dinner easy. Our favorite keto slow cooker recipe has always been a delicious and easy pot roast. When we started eating keto, I decided to adapt the traditional Mississippi Pot Roast to make it more keto-friendly. Frequently Asked Questions About Mississippi Style Keto Pot Roast

WHY IS IT CALLED MISSISSIPPI-STYLE POT ROAST?

According to Google, the original recipe came out of Ripley, Mississippi, in the 1990s by Robin Chapman, who was looking to make a recipe her aunt made milder. The recipe was later contributed to a church cookbook by a friend, and the rest is history. If you prefer chicken over beef, give my Crock Pot Mississippi Chicken a try.

HOW IS THE MISSISSIPPI POST-ROAST DIFFERENT THAN REGULAR POT ROAST?

This Keto Mississippi Pot Roast Recipe is naturally low carb as there are no potatoes and carrots. The stars of the show that set it apart from the rest are a stick of butter, ranch dressing mix, and pepperoncini peppers. The traditional recipe also calls for a packet of gravy mix, but I omitted that for a keto version. If you are strict keto and prefer not to use a packet of ranch dressing mix, there are lots of recipes on Pinterest for homemade ranch dressing mix.

IS KETO MISSISSIPPI POT ROAST SPICY?

No! I am a total wimp when it comes to spicy foods. This recipe is mild. My toddlers even love it.

IS IT NECESSARY TO SEAR THE POT ROAST BEFORE SLOW COOKING?

I used to sear the roast first in a cast iron skillet but skipped the step once due to time constraints, and I could not tell the difference at all. The roast was still every bit as flavorful and tender, so now I don’t bother with searing it anymore. It saves time, and there is less mess in my kitchen.

HOW LONG TO COOK CROCK-POT ROAST RECIPE?

Although sometimes cooking times can vary depending on the size and shape of the roast, generally, you will cook on high for 4-5 hours or low for 9-10 hours. If you find that the pot roast in the Crock-Pot isn’t fork tender after the allotted cooking time, it needs to cook longer. Go ahead andshred the roast if it is tender enough to shred, then continue to slow cook on high for another hour or so. If it isn’t tender enough to shred, continue slow cooking for at least an hour on high without removing the lid. Removing the lid from the Crock-Pot causes heat to escape, which increases the cooking time. CROCK-POT KETO POT ROAST RECIPE (MISSISSIPPI STYLE) (2)

One-Step Mississippi Style Keto Pot Roast

This Mississippi Pot Roast Keto Recipe is so easy to make; you simply dump all the ingredients in the slow cooker, add a stick of butter on top, turn it on, then forget about it until it’s ready. It reminds me of Sunday lunch at my grandmother’s house when I was a child, which feels like comfort food.

WHAT IS THE BEST CUT OF BEEF FOR A POT ROAST?

I was surprised to find that a tougher cut of beef with lots of marbling makes a better roast when making a recipe for a roast in the Crock-Pot. For the most tender meat, choose one of the roasts listed below.

  1. Chuck Roast (highly marbled with a lot of fat) – also labeled Shoulder Roast, Blade Roast, Chuck Shoulder, Severn Bone Roast
  2. Bottom Round Roast (leaner than chuck roast) – Roast Rump Roast or London Broil
  3. Beef Brisket (lots of fat) – comes with a much heftier price tag than either of the others and is usually BBQed or smoked

HOW TO SHRED POT ROAST?

I used two forks to shred the pot roast in the Crock-Pot by placing the forks back to back in the roast adjacent to each other with the tips in the meat. Then, pull the forks in the opposite direction to shred the pot roast. I pull out large pieces of fat as I shred and discard.

HOW TO THICKEN THE GRAVY?

Most who follow a keto or low carb recipe avoid corn starch and regular flours, which are often used to thicken gravy in pot roasts. A keto-friendly alternative is Xanthan Gum. Only use a small amount and let it sit on the food for five to ten minutes to give it time to thicken. I always start with 1/4 to 1/2 tsp to start, then add more if needed. If you use too much, the food will have a slimy texture.

HOW TO STORE THIS RECIPE:

This rich and flavorful Low Carb Pot Roast stays good for 3-4 days in the fridge or 5-6 months in the freezer in a freezer-safe container. You can also repurpose it to use in Keto Beef Stew.

TIPS FOR THE VERY BEST KETO POT ROAST:

  • Use a Chuck Roast as it will be the most tender and flavorful when slow-cooked.
  • Use beef broth instead of water for a nice bold flavor.
  • While I always skip searing a pot roast to save time, experts say that searing is best. Personally, from testing it both ways, I can’t tell the difference.
  • If the pot roast seems tough, it likely needs to slow cook longer. Close the lid and check again in an hour or so.

FAQs

What is the difference between a pot roast and a Mississippi pot roast? ›

The Mississippi pot roast and regular pot roast differ in their flavor profiles and ingredients. Mississippi pot roast is known for its unique combination of ranch seasoning mix, au jus gravy mix, butter, and pepperoncini peppers, resulting in a tangy and slightly spicy taste.

Does pot roast get more tender the longer it cooks crock pot? ›

Yes, pot roast absolutely becomes more tender the longer it cooks. Roasts are generally made from tougher cuts of meat, such as chuck or brisket, which contain a lot of collagen, connective tissue, and fat. These tougher tissues require a long cooking time to break down and for the collagen to converts into gelatin.

Is it better to cook a pot roast on high or low in a crock pot? ›

The meat will be falling apart, and the vegetables soft and tender. Remember to taste test and add extra balsamic vinegar, brown sugar, salt or pepper if needed. PRO TIP: It's better to cook pot roast on the low setting rather than the high setting. Your meat will be tender and delicious every time.

Do you have to brown a roast before putting it in the crock pot? ›

Browning Is Better

Slow cooker recipes don't always instruct you to brown meat before adding it to the pot, but there are some advantages to doing so. If you sear meat to a crusty brown with a little oil in a hot skillet, the meat develops more complex flavors and improves the dish.

Why is there so much butter in Mississippi pot roast? ›

Butter: A stick of butter locks in moisture and keeps the roast from drying out. Packaged mixes: Use one packet of au jus gravy mix and one packet of buttermilk ranch dressing mix. Seasonings: Simply season the roast with salt and pepper.

What can I use instead of pepperoncini in Mississippi pot roast? ›

But if you don't have any on hand, these are the 5 best substitutes for pepperoncini you can use:
  1. Banana Peppers.
  2. Cherry Peppers.
  3. Anaheim Peppers.
  4. Poblano Peppers.

Do you put vegetables on top or bottom of pot roast? ›

Using tongs, sear meat on all sides until browned and place on top of vegetables in the crockpot. Add whole garlic cloves into the crevices of the roast (on the top and bottom usually where there is a seam of fat).

Is 4 hours on high the same as 8 hours on low for a crock pot? ›

The difference between "High" and "Low" on slow cookers seems to differ with every brand and model. One thing that is consistent, though, is that food takes seven to eight hours to reach a simmer point (around 210°) on low; versus three to four hours on high.

Should my pot roast be covered in liquid? ›

Although there may be no wrong way to enjoy this one-pot classic, there are cooking tips that can help you make a high-quality pot roast every time. One of the best is that there's no need to fully submerge the roast in the cooking liquid.

Should a roast be flipped in crock pot? ›

There is no need to flip meat in a crock pot. In fact, I don't recommend trying it because it will be more hassle than it's worth. While it can be tempting to flip a roast in the name of even cooking, the crock pot takes care of that for you.

When to add potatoes in pot roast? ›

Add the carrots and potatoes to the pot when there's about an hour of cooking time left, turning the roast over when you do. To serve, spoon any excess fat off the surface and slice or shred the beef to serve with the veggies, drizzled with sauce. Serves 6-8.

Why is my roast still tough after 6 hours? ›

There are several reasons why this could have happened even after so much cooking. First, your choice of a rump roast could be a factor since cuts from the hind quarter are very muscular and, since muscles are the most resistant to breaking, this cut is quite stubborn when it comes to becoming tender.

Which pot roast is the most tender? ›

The best meat for pot roast is a beef cut with abundant connective tissue, like chuck roast, beef brisket or bottom round roast. This connective tissue called collagen is what makes pot roast melt-in-your-mouth tender.

Are chuck roast and pot roast the same thing? ›

A pot roast isn't a specific cut of meat — it's just a method of preparing a cut of meat by slowly braising it with liquid (like stock or wine) until it's juicy and tender. Pot roast can be made with many cuts of meat (including chuck), and goes by various nicknames, including arm roast and clod roast.

Which is better rump roast or pot roast? ›

If cooked quickly, a rump roast would be as tough as shoe leather, but when slowly braised as a pot roast, a rump roast melts in your mouth with the complex, flavorful juices released by the meat during a long period of cooking.

What is the difference between pot roast and Yankee pot roast? ›

Many people have asked us what differentiates a Yankee Pot Roast from just a “pot roast.” Basically a pot roast is beef that is braised in liquid – but a Yankee-style pot roast is cooked and served with root vegetables (our recipe includes carrots, potatoes, parsnip and turnip).
