How to Make Stuffed Pepper Soup in a Crock Pot

I do not really know how to express in words how much my family loved this Crock Pot Stuffed Pepper Soup. Multiple people went back for seconds, and even my child who is a picky eater finished her bowl and proclaimed that it was amazing! It was a huge win in my house, and I hope it is in yours as well.
Because lean ground beef costs quite a bit more than 80/20 ground beef, one option is to use 80/20 instead of lean. However, if you want to keep this recipe really beefy while keeping costs down, I have a tip. One thing I like to do is watch for sales on the three pound 80/20 ground beef logs. With the higher fat content, you don’t have quite as much meat per pound as you do with a pound of lean ground beef. However, I prepare the three pounds with our Crock Pot Make Ahead Ground Beef recipe and divide it in half. Then I use each half in place of one pound of lean ground beef. By buying the 80/20 when it is on sale, I can still save a couple bucks per half (versus the price of lean ground beef) while keeping about the same amount of meat as the lean.

What You Will Need for Crock Pot Stuffed Pepper Soup
Ingredients Needed
- 1 lb lean ground beef
- 1 cup onion, diced
- 14.5 oz can diced tomatoes with basil, oregano and garlic
- 2 cups green and/or red peppers, chopped
- 15 oz can tomato sauce
- 3 cups beef broth
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 cup white rice, cooked (The measurement is before cooking.)
Equipment Needed
- Skillet and strainer or micro cooker
- Sharp knife
- Cutting board
- Measuring cups
- Measuring spoon
- Can opener
- Spoon
- Stirring spatula
- 6 quart slow cooker
- Whatever you need to make your favorite rice
Time Needed
- Prep Time: 15 minutes
- Cooking Time: 6 to 8 hours on low or 3 to 4 hours on high, stirring halfway through cooking time if possible

Ingredients
- 1 lb lean ground beef browned and drained
- 1 cup onion diced
- 14.5 oz Diced Tomatoes with Basil, Oregano and Garlic undrained
- 2 cups green and/or red peppers chopped
- 15 oz can tomato sauce
- 3 cups Beef Broth
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 cup rice cooked (Measurement is done before cooking.)
Instructions
Put all of your ingredients, except your rice, in your 6 quart slow cooker and stir until well combined.
Cover and cook on low for 6-8 or high for 3-4 hours, stirring halfway through cooking, if possible.
About 30 minutes before serving, stir in your cooked rice and let cook for remaining time.
