What is coffee extract?

Coffee extract is a highly concentrated liquid made with ground coffee and alcohol. The alcohol helps to fully extract the flavor from the beans and also makes the final product shelf stable, good to use for months. It is growing in both popularity and the number of ways it is being used.

How to use coffee extract

Baking is the most popular use for this extract. Many recipes call for the use of espresso powder, aka instant coffee. However, most instant coffees on the market are made with cheap, bitter coffee. Substituting homemade coffee extract in a recipe will result in much better flavor. To substitute, simply replace the same amount of extract for the instant coffee. For example, if the recipe calls for 1tsp of instant coffee, replace it with 1tsp of the extract. Coffee extract can also be substituted for other flavors of extract, or added to any baking recipe for another layer of delicious flavor!

Ingredients:

  1. Coarsely grind 30 grams of coffee. If you don’t have a coffee grinder, place the beans on a paper towel or washcloth, fold over the top of the beans, and crush with a rolling pin or hammer.
  2. Pour grounds into mason jar

  3. Pure 375ml of vodka over the coffee grounds
  4. Tightly seal the lid and shake vigorously

  5. Leave to rest
  6. After 24 hours, shake vigorously and leave to rest
    1. Repeat daily for three days
  7. After three days, place filter over a separate container

  8. Pour the contents of the jar through the filter, leaving behind the spent coffee grounds.
  9. Enjoy!
