Ingredients:

3-4 Large Eggs

4 cups water

Ice water bath

Optional Marinade

1 cup soy sauce

1/2 cup aji mirin

Method:

  1. In a sauce pot, bring the four cups of water to a boil.
  2. Rinse the outside of the eggs with cool water and then slowly submerge them in the simmering water. Use a slotted spoon to transfer the eggs and prevent splashing.
