  • 1-1¼ lbs. pork tenderloin
  • Sea salt and black pepper, to taste
  • 3 T. extra virgin olive oil, divided
  • 1 large yellow onion, sliced
  • 2-3 large cloves garlic, minced
  • 1 t. garlic powder
  • ½ t. dried oregano
  • ½ t. dried thyme
  • ½ t. dried rosemary
  • 1/3 c. balsamic vinegar
  • 1/3 c. chicken broth, preferably organic
  • 1/3 c. honey, preferably local
  • 1-2 T. cornstarch
  • Optional: Fresh thyme leaves, for garnish

How To Make Instant Pot Balsamic Pork Tenderloin

Step 1. Cut the tenderloin into two or three pieces. Then sprinkle salt and pepper on it.

Step 2. Select the sauté function on the highest setting. Add two tablespoons of olive oil to your Instant Pot and put in pieces of pork tenderloin. Cook for two or three minutes on each side until it is nicely browned. Transfer the pork to a plate and set it aside.

Step 6. When the cooking time is done, let the pressure release naturally for 10 minutes. Then let out any remaining pressure. When there's no more steam coming out, carefully open up the lid and put the pork on a plate.

Step 7. Add cornstarch to a small bowl. Put hot liquid from the Instant Pot in the bowl and stir it with the cornstarch. Add this slurry slowly into the sauce. Stir for 1-2 minutes until it thickens.

Step 8. Serve the succulent pork with a touch of balsamic sauce and garnish it with thyme leaves. Consider serving the remaining balsamic on its own in small jars for people to add as they please if you don't want them to have too much or not enough.
