Lately, especially this past week, I feel like time is not my friend. I feel like I am running out of time and can never get the to do list done. Somehow dinner time pops up and I am like, “woah, wasn’t is just lunch time?”.

Then I am standing in the kitchen looking at the meal plan that I made earlier in the week realizing that I can make the meal I planned and have hungry kids letting me know just how hungry they are or I can whip up something super quick. I have been going with super quick, because having 4 kids tell me how hungry they are is not my thing.

Last week I made this Kielbasa and Sauerkraut Skillet Recipe that was SUPER easy and everyone loved it! From here on out I am keeping the ingredients for this easy Kielbasa and Sauerkraut Recipe on hand at all times for those days that time gets away from me and I will be making a double batch so we have left overs for lunch the next day!

What is Kielbasa?

Kielbasa is a type of meat that is ground meat, mixed with spices stuffed into an edible casing and then smoked. In the grocery stores it comes in a U-shape that is already precooked.

The great thing about it being precooked is that it makes for a super quick cooking when you are making a kielbasa recipe for dinner and are short on time.

What do you serve with Kielbasa and Sauerkraut?

This one dish meal is perfect on its own, however when I made Kielbasa and Sauerkraut for dinner I also make a fresh salad.

If you are making a salad you can make a quick one with fresh ingredients or go a little bit fancier and make the Low Carb Olive Garden Salad or a Caesar Salad.

Low Carb Kielbasa and Sauerkraut Skillet Ingredients

  • 2 tablespoons olive oil
  • 14 oz polish kielbasa
  • 1 onion
  • 2 bell peppers
  • 1 1/2 cup sauerkraut
  • 1 teaspoons garlic powder
  • salt and pepper to taste

How to Make Low Carb Kielbasa and Sauerkraut Skillet

Wash the bell peppers and cut into pieces and set aside in a bowl.

Next peel and cut the onion into pieces and add them to the bowl with the bell peppers.

Cut the kielbasa into bite sized circular pieces and add to the bowl.

Heat the olive oil over medium-high heat in a large skillet.

Once the oil has heated, add the kielbasa, onions, and pepper, garlic powder to the skillet.

Frequently stir everything in the skillet, until the onions are soft and translucent and the peppers and tender.

Next stir the sauerkraut in and continue cooking for another minute or two, to heat the sauerkraut fully.

Season to taste with the salt and pepper.
