"This is a Awesome (!) meatloaf that I've adapted from a turkey meatloaf recipe from allrecipes.com. The original recipe calls for 2# of ground turkey, but this recipe is better with 1# of ground chicken and the added shredded veggies. You can use ground turkey, but I personally prefer the milder taste of ground chicken. This meatloaf tastes amazing and is a great way to incorporate more colorful veggies into your menu (or to hide them for picky little ones). Bon apetit!"

 1. I made this for dinner and we liked it very much. Next time I may back off on the amount of bread crumbs or, as another chef did, use oats instead. This meatloaf made a good, albeit mild, sandwich the next day. I omitted the ketchup and none of us missed it. Thanks for posting such a healthy and delicious meatloaf.

 2. I loved this and so did my husband. I too made some modifications. I used 12 grain bread to add whole grain, and it was still very nice. I also waited until the last 10 minutes to add the ketchup. I did have to drain off fat before I put the ketchup on, so don't be surprise if that happens.

 3. Delicious recipe! I did change a few things around as I needed to use what I had on hand. I added 1/2 lb Johnsville italian mild sausage and added dijon mustard and brown sugar to the ketchup for topping meatloaf. Added some chopped fresh broccoli and green bell pepper and omitted zucchini as I didnt have any. Also added 2 slices of provolone cheese in middle of meatloaf. I baked it for a hour and half at 400' . Thanks for sharing the recipe!! We enjoyed it!!

 4. Just made a version of this meatloaf with a few of my own twists and it was so tasty. My very picky 7 year loved and said that I need to make this all the time now. This is definitely going to have a repeat on our dinner table.

 2. I modified this recipe a bit in order to use what I had in my pantry. Here's what I changed:
I substituted Panko bread crumbs for 3/4 c. uncooked oats AND 1/4 c. Progresso bread crumbs; the mozzarella and cheddar cheeses for 1 1/2 c. Kroger brand casserole cheese blend.
Also subbed 3 heaping Tbl. Italian seasoning for Italian herb seasoning
Added 2 tsp Mrs. Dash original
Reduced milk to 3/4 c.
Increased carrot and zucchini to 1/2 c.
Baked in 8"x8" greased glass dish for 50 minutes, internal temp reached almost 190º.
Super delicious!

I am a SAHM who loves to cook for my small family! I have a 14 month old daughter, a wonderful husband, a seven year-old Keeshond and a cat named Rex Manly. I really just love this website! I visit it practically every weekday for ideas and recipes and try to always post a review of everything I make from Zaar. The only time I don't is when I have a negative reaction to a recipe that was due to my mistake or if I have substituted so many ingredients that it wouldn't be a fair review. Thanks to all of you wonderful cooks who have made me a better cook myself!

FAQs

What is the secret to a great meat loaf? ›

Clever cooks get deliciously rich texture by adding milk to seasoned breadcrumbs and allowing all the liquid to be absorbed. This time-honored tradition for making the most succulent meatloaf creates a flavorful binder that evenly distributes moisture throughout the loaf.

Which is healthier, ground chicken or ground turkey? ›

Both chicken and turkey provide healthy protein. Generally, chicken tends to be higher in vitamin B6 and pantothenic acid, and turkey tends to be lower in calories, fat, and sodium while having more zinc, niacin, and vitamin B12.

Why is my ground turkey meatloaf mushy? ›

Poultry has less fat than most ground red meat, of course, but it also has less connective tissue. Connective tissue provides support and texture to meat, so with less of it, meat becomes mushy and compact when cooked.

Why does my turkey meatloaf fall apart? ›

Why Does My Turkey Meatloaf Fall Apart? You may find your meatloaf is crumbly or falling apart if you used too many breadcrumbs or not enough eggs.

What is the secret to keeping meatloaf moist? ›

Fat Is Your Friend

This is the reason most cooks choose ground chuck since it has this ideal proportion of fat to meat. During cooking, the fat will liquefy, making the meatloaf moist.

What ingredient keeps meatloaf from falling apart? ›

In meatloaf, this is most commonly the eggs and breadcrumbs. Your binding ingredient is only second to the meat itself in your recipe and the reason why meatloaf crumbles. When this happens, it's because you didn't use enough. Next time, try adding in an extra egg and/or some more breadcrumbs.

Which is the healthiest meat to eat? ›

Healthiest: Skinless Turkey Meat

An excellent source of niacin and vitamin B6, skinless turkey, is one of the best lean proteins to add to your meals. The nutrients found in skinless turkey meat can help support heart health, energy levels, brain function, digestion, and other bodily processes.

Can I eat ground turkey every day? ›

The bottom line is yes—it is okay to include ground turkey in your diet regularly, though as with any food, it's crucial to eat it in moderation and variety in your food choices. Eating a diverse range of nutrient sources helps ensure you obtain all of the essential nutrients needed for enhancing overall health.

What is the healthiest ground meat? ›

The Bottom Line

If you're eating for a healthy heart, lean ground turkey—which is lower in saturated fat—is the better pick for you. Of course, you can still enjoy ground beef from time to time, but choosing lean ground turkey more often will help your heart in the long run.

Can you put too many breadcrumbs in meatloaf? ›

Adding more to your mixture is always easier than taking some out. Another common reason meatloaf is mushy is too much filler, like breadcrumbs, bread, and oatmeal. Too much filler will stop it from baking correctly and becoming a fully formed meatloaf.

Why is my meatloaf tasteless? ›

You're Not Sufficiently Seasoning the Meat

This is crucial. Unseasoned meat, as you can probably guess, doesn't taste like a whole lot once baked into a loaf, so it's important to add ample salt in order to bring out the inherent savory flavors of the ground meat.

How do you keep meatloaf from being dense? ›

Overmixing will make a meatloaf dry and dense. Start by stirring the wet ingredients together. Then add the sautéed veggies. Now, before starting to mix it all together there like a mad man, just stop.

What not to put in meatloaf? ›

Onions, garlic and celery do pose one problem though: they don't cook down easily. Little bits of crunchy onion or celery or potent, hot garlic will spoil the comforting aspect of eating meatloaf.

What is the best binder for meatloaf? ›

If you don't have any bread, you can substitute it for breadcrumbs, crackers, cereal grains, oatmeal, instant rice, instant barley, or even potato flakes! However, bread is still the best choice of all the potential options.

How do you keep ground turkey from falling apart? ›

Just like in a traditional meatloaf, you need something to hold the meat together. Try adding some dry breadcrumbs to the turkey mixture before you shape the patties. The crumbs will absorb the moisture and, together with the egg, will act like glue and help your burgers maintain their shape on the grill.

What is the basic meatloaf formula? ›

The Basic Meatloaf Formula

All recipes for meatloaf start with the same basic formula: 2 pounds of ground meat and a “panade” made of bread or crackers soaked in milk. Along with a few eggs, this panade helps to hold the ground meat together and adds some essential moisture to the mix.

Why add milk to meatloaf? ›

Milk and other dairy products, like heavy cream and buttermilk, contain both water and fat, adding two types of moisture to our meatloaf. There's a long-held theory that milk can tenderize ground meat, and this is the reason often cited for cooking ground meat in milk to make a Bolognese-style ragù.

Should I cook my meatloaf covered or uncovered? ›

Should I cook my meatloaf covered or uncovered? The meatloaf can be cooked uncovered. However, if you are concerned about it burning, you can cover the meatloaf with foil for the first 45 minutes and uncover it for the final 15 minutes to allow the meatloaf to brown on top.
