How to pick the plums for this muffin recipe.

Picking out aplum is tricky. The color doesn't give you a hint of what is inside. Of course, the best way to pick a perfect plum is to get them right off the tree in the orchard when they are at peak ripeness but most of us have to source our plums from our local market. Don't evenbother withany plums that have a wrinkled skin. Don't shy away from plums that have that chalky, white powder on their on their skin. It's called the bloom. The presence of bloom on a plum is a good sign that it hasn't been handled a lot on its way to the store from the orchard. A plum should smell sweetly fruity. It should not be overly soft to the touch but be firm, not hard, and have just a little give when gently squeezed.

How to store your plums for you Plum Muffins

When you get the plumshome wash them gently in lukewarm water. If not yet ripe, they can be left at room temperature until they ripen. To hasten the ripening process you can place them in a paper bag for a couple of days. When they reach your desired level of ripeness, the plumscan be stored in the refrigerator in a plastic bag where they will keep for up to a week. No fruit or vegetable is the same after being refrigerated but it is better than having them gosoft and mushy on you.

  • Cuisine: American, New England

Ingredients

Scale

  • 2 ¼ cups flour
  • ½ cup sugar
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • 1 egg
  • ¼ cup butter, melted
  • 1 teaspoon pure vanilla extract
  • 1 cup red plum, coarsely chopped

Instructions

  1. Preheat your oven to 425 F.
  2. Grease a 12 cup muffin pan or line with paper liners.
  3. In a large mixing bowl, combine the flour, except for 1 tbs., sugar, baking powder and salt and mix thoroughly.
  4. Combine milk, egg, melted butter, and almond extract in a separate bowl and whisk together.
  5. Add wet ingredients to the dry ingredients and mix till batter comes together. Be careful not to overmix.
  6. Dust the plum pieces with the remaining flour (this will help keep the plums from sinking to the bottom of the muffins and more evenly distribute them in the flour) and then gently combine into batter.
  7. Spoon the batter into the muffin tin and bake for 20 to 25 minutes, or until a wooden pick inserted in center comes out clean.
  8. Allow to cool for 5 minutes, then remove from muffin pan. Finish cooling on rack.

Thanks for coming over with a comment, Cheryl, I really appreciate it! I know, I've been canning for years too, and years before that with my mom at home, but never heard or thought of doing grapes. It's the easiest canning I've ever done, that's for sure. Excited to be able to share it!

Hmmm, now it worked. I removed a link. But I can see by another comment above with three links that shouldn't be a problem. Maybe there's a glitch you would like to know about? Thank you again for hosting this and I love your blog!

What can I add to muffin mix to make it moist? ›

The traditional options are apple sauce, pumpkin purée, and mashed banana, but puréed white beans or puréed peaches can also work. Remember to adjust your other liquids to account for the added moisture. Increasing the sugar content of the recipe can also help. Applesauce is probably the easiest thing.

How to make muffins more moist after baking? ›

Use a steamer. Steaming is a great way to add moisture to past-their-prime muffins. And according to a TikTok user, you should also be steaming your muffins when you bake them since the hot air and steam allow more time for the centers to rise, resulting in tender and airy muffins.

How do you make muffin mix less watery? ›

If it's still very liquidy, try adding another 1/4 cup of flour. If you don't have a mixer, just do the best you can by hand.

What does adding an extra egg do to muffins? ›

If there isn't enough egg, your batter or dough may not be able to hold its structure or could end up overly dry or dense. On the other hand, if there is too much egg, your baked goods could lose their shape due to excess liquid, or have a rubbery (or even overly cakey) texture depending on the recipe.

Are muffins better with oil or butter? ›

It is possible to replace oil with butter in a muffin recipe as generally most muffin recipes are quite forgiving and you may find that butter gives a better flavour.

Are muffins better with water or milk? ›

Muffin FAQs

We recommend using water; however we know that some Makers prefer to use milk to make muffins. Using milk can change the texture of the muffin to be more like a cupcake.

What temperature do you bake muffins at? ›

Bake at 350°F (177°C) the whole time. Standard Size Muffins or Mini Muffins: For standard size muffins baked in a 12-count muffin pan, reduce baking time to about 20 total minutes: 5 initial minutes at 425°F and 15 minutes at 350°F. Yields 14-15 standard size muffins.

How do you keep muffins moist? ›

The Best Way to Store Muffins
  1. STEP ONE: Let the muffins cool completely on a wire rack.
  2. STEP TWO: Line an airtight storage container with paper towels.
  3. STEP THREE: Place muffins in the container, on top of the paper towels.
  4. STEP FOUR: Place an additional paper towel layer on top of the muffins.

What not to do when making muffins? ›

Overmixing the batter.

When you overmix the batter, it crushes the air bubbles and ruins the fluffy texture. → Follow this tip: To ensure a batch of light, fluffy muffins, mix the dry ingredients with the wet ingredients until just barely combined, and no more dry flour is visible.

Should you let muffin batter rest? ›

Rest the Muffin Batter

The first, most hands-off way to make your muffins pop (literally) is to let the batter rest. Make the batter, cover the bowl with plastic wrap, and let the batter rest at room temperature for about 1 hour. If you're short on time, just 30 minutes can make a difference.

How to get domed muffins? ›

According to O. Corriher, the way to get a perfectly puffed up dome on your muffins is to increase your oven heat. She says that 400° should do it, no matter what the recipe says. The higher baking temperature means that the the outside edges of the muffin will set while the middle is still liquidy.

How to make box muffins moist? ›

Applesauce is a wonderful way to add moisture to your muffins. You can use it in place of the oil your muffin mix calls for. You'll want to measure carefully and replace the oil with half as much applesauce. For instance, if your mix calls for one cup of oil use one-half cup of applesauce.

What to do if muffin batter is too dry? ›

It may be necessary to change the amounts of flour and/or liquid, or to make temperature changes. Muffins may need a 15 to 25°F temperature increase, depending on other ingredients used.

What makes muffins wet? ›

Sugars are hygroscopic, meaning they attract water. Within baked goods, sugars help maintain a moist and tender crumb. Sugar on the exposed tops, however, will grab water from humid air, creating a wet or sticky top.

How to keep muffins moist? ›

If muffins are left exposed, the moisture starts to leak from them and they dry out. To store muffins up to 4 days, line an airtight container or zip-lock bag with paper towel and store the muffins in a single layer. Place another layer of paper towel on top of the muffins as well.

What makes muffins not dry? ›

For baking you need to use a product that is a minimum of 70% fat. Spreads with less fat contain more water, resulting in dry, less tender muffins. Remember that one stick of butter or margarine is equal to 1/2 cup and not 1 cup. If you confused the two, you will be cutting the amount of fat used by half.

Why are my muffins dense and moist? ›

Too much liquid in the batter - If the batter contains too much moisture, the muffins will be dense. Why do my cake loaves have a rubbery texture instead of a crumbly texture? Overmixing. Quick bread batters need to be gently folded together just until the dry ingredients have disappeared into the wet.
