Welcome back! Our Christmas was wonderful and we are still enjoying time off of school and work. Our house looks like a Lego factory threw up all over the living room but my boys are in heaven

Today, I have a delicious Baked Potato Soup Recipe to share with you. I made this recipe a couple weeks ago and we loved it. It is a very creamy, cheesy potato soup. The Dutch Oven Bread recipe that I shared last week goes perfectly with this soup!

If you’re in a real time crunch….I think you could use frozen hash brown (diced-style) for the poatoes. I buy them in 2# bags at Koger.

Do you have a scaled down version for the ingredients? I only live with my fiance so we don’t need that big of a crock pot’s worth, maybe just for a little bit of leftovers. This looks so amazing! I might make it this weekend! 🙂

Leave the peels on to add a rustic texture to soups or chowders. Thick soup, creamy chowders, and chunky stews typically have a heartier texture if you leave the peels on the potatoes. To make the dishes easier to eat, keep the potatoes about 1 inch (2.5 cm) in size or smaller.

Are russet or yellow potatoes better for soup? ›

Best Potatoes for Soup

How do you keep potatoes from getting soft in soup? ›

Cut the potatoes into rissolettes and blanche them (i.e. cook them briefly, not to full doneness). Use the water you used in the soup and put the potatoes back in when you go to warm the soup again for serving. Since they're cut fairly small, they should be just about done without being mushy when you go to eat.

Are yellow or white potatoes better for soup? ›

Round white potatoes (top left): These round, white spuds are low in starch and are often called waxy potatoes. They hold their shape better after cooking. This makes them one of the best potatoes for soup when you want chunks of potato with skins still on.

Why are my potatoes still hard in my soup? ›

Old Potatoes: Very old or stored potatoes can become starchy and may not soften as well during cooking. It's best to use fresh, firm potatoes. Acidic Ingredients: If your soup contained highly acidic ingredients (e.g., tomatoes), it could have affected the texture of the potatoes.
