In Israel’s Negev region alone, there are over 100 potato varieties being grown with many of those crops being exported to countries around the world. You’ve probably heard of some of the top potato varieties such as Russet Potatoes, Yukon Gold, Red Potatoes, Fingerling Potatoes, and the famous Dod Moshe potato grown in Israel. With so many potato varieties to select from it can get quite confusing to know which one to choose. Fear not, we’ve compiled a list of our favorite potatoes you can include in your next meal.
Russet Potatoes
Russet potatoes are a type of potato that has an irregular, oblong shape. They have a rough flesh that’s brown on the outside and white on the inside. The russet is a classic potato variety and is the most popular variety grown in North America. It’s also called “Idaho” or “baking” potato, due to its common use in baking.
The russet was first developed commercially in 1871 by Luther Burbank, who crossed two varieties from Europe to create this new variety with large tubers best suited for baking. The russet’s popularity grew quickly after it was introduced to consumers because it produced high yields and provided good storage qualities for long periods of time when stored at cool temperatures.

Russets make great fries since they are high in starch content which helps them absorb more oil during frying than other varieties of potatoes do; they also have a relatively thin skin, so they don’t need as much time to cook.
Yukon Gold Potatoes
Yukon Goldpotatoes are a type of white potato with a yellow color that gets its name from the Yukon Territory in Canada. The name was chosen because this type of potato originated there, although it’s actually grown in many places around the world today.
Yukon Gold potatoes are very similar to another popular, yellow-fleshed variety called round white potatoes (also known as russets). The biggest difference between these two types of potatoes is that Yukon Golds have thinner skins than round whites and contain less starch, which makes them less starchy when cooked.
