Tips on freezing fresh horseradish.
Q. Can you freeze fresh horseradish root? If so, do you just pop in the freezer whole, or should you grate it first?
A. Yes, you can freeze horseradish, although it may lose a little pungency.
It’s best to peel it and grate it first, and then freeze it in small amounts so you can thaw just what you need. There are a couple of easy ways to do that. Either spoon 1- or 2-tablespoon amounts into plastic ice cube trays, or line a baking sheet with plastic wrap, spoon out dabs of grated horseradish, then place the pan in the freezer. When the dabs are hard, peel them off the plastic and store them in a resealable freezer bag or freezer-safe container.
They should keep about six months.
