Valentine’s Fortune Cookies

Cookies, Valentines No Reply

Happy Valentine’s Day! Or should I say Happy Cookie Friday?! Well… this year both events come together, so this is why we have Valentine’s Day themed cookies today. I turned some fortune cookies into special Valentine’s Day (Love Message) Fortune Cookies. I thought that would be fitting ;)

Last week I already made Valentine’s Day Chocolate Heart Cake for all the lovers out there with a big appetite for cake. Today’s sweet bake is a bit lighter and without any hearts. I did not want to overdo the whole heart thing. So no heart-shaped cookies. Just red cookies… I think the color and decoration still give the theme away, right? ;)

I really like fortune cookies – if you are making them yourself at home you can customize the messages inside the cookies and also do some additional decorations – the ones you can buy in stores are all the same – one color and the same kind of messages inside. They need a bit of practice to get them perfect but it’s actually not too difficult. Depending on who should get the cookies you can adapt the messages inside – write little love messages or just nice messages for friends to show them you like them… or maybe you want to use the cookies to create little vouchers (You get one massage / One dinner with me / Drinks in your favorite bar / …) – it’s up to you what kind of messages you want to hide in your cookies ;)

The ingredients for these cookies are pretty much basic – if you are baking sometimes you probably got everything at home right now… so if you need something for Valentine’s Day you could definitely still do these cookies now. There will be a lot of smiles and happiness for sure if you hand out some of these Valentine’s Day Fortune Cookies. So start baking!

4 tbsp. water

For the decoration:

1/2 tsp. coconut oil
some sprinkles

about 20 messages (about 2×0.6 inches)

(ca. 20 Kekse)

Für den Teig:
60g Eiweiß
3 EL Pflanzenöl
60g Mehl (Type 550)
100g Zucker
1 EL Vanillezucker
1 1/2 TL Speisestärke
1/4 TL Salz
4 EL Wasser
etwas Lebensmittelfarbe (rot oder pink)

Für die Dekoration:
50g weiße Schokolade, gehackt
1/2 TL Kokosöl
bunte Sprinkles

ca. 20 Zettel mit Sprüchen (ca.5×1,5cm)

DIRECTIONS / ZUBEREITUNG

  • English
  • Deutsch

1. Create the little messages on paper to go into the cookies – either created with a computer and printed or by hand.

2. Preheat the oven to 390°F (200°C). Line a baking sheet with a silicone baking mat* and set aside. Place the things you need on your working space: a muffin tin*, a cutting board, a dough scraper*, or spatula* and a round cookie cutter* (about Ø 3.5 inches).

3. Whisk the egg whites with the oil in a bowl until foamy. Set aside. Add the flour, sugar, vanilla sugar, cornstarch, and salt to a second bowl and mix until well combined. Add the water and mix until you get a thick batter. Add the egg white mix and fold in to get a more runny batter. Add some drops of food color and mix in.

4. Use a spoon to place two portions of batter (about 1 1/2-2 tablespoons each) on the baking mat and spread out with the back of the spoon to create (only) two rounds of about 3.5 inches (9cm) in diameter – the batter should be spread out quite thin. Bake for 5 1/2-6 minutes until the edges got some color. Take out of the oven and immediately use the cookie cutter to cut out rounds. Remove from the baking mat with the dough scraper or spatula and place it on the cutting board. If there are still some pieces of the edge that did not come off by using the cookie cutter, remove them with a knife or scissor. Place a little paper on top of the dough round and fold in the middle to create a semicircle – the side of the dough round that was facing up while baking should be on the outside now. Press the edges together and bend into the shape of a fortune cookie. You can also achieve this by pressing the semicircle on a cup or glass. Place the cookies in the molds of the muffin tin so they keep their shape while drying/cooling down – that takes several hours. Repeat with the remaining dough.

5. Add the white chocolate and coconut oil to a bowl and either melt over a pot with simmering water or in the microwave – mix until well combined. Brush the cookies with the melted chocolate on one side and decorate with the sprinkles.
