Learn how to cook sausage three test kitchen-approved ways: on the grill, in the oven, or in a skillet. No matter which method you use, you’ll have plump, juicy, and flavorful sausages ready in no time!
These sausage cooking methods were perfected in our test kitchen. Here are some tips and tricks from the experts:
Opt for the “reverse sear” method when cooking sausage in any way: Cooking something slowly and gently until the desired temperature is reached, then flash-browning the skin at the end.
Lining your baking sheet with foil makes cleanup a breeze!
Indirect heat on the grill is a great way to gently cook foods without too much heat to risk burning the outside before the inside is done
Insert the temperature probe horizontally instead of vertically. This way, you’ll be much more likely to hit the center of the meat and get a more accurate reading.
It is not necessary to pierce sausages. In fact, it is not recommended, since all the juices will spill out and cause a shriveled sausage. The cheaper the sausage, the more likely this is to occur.
To cook the sausages in about 20 minutes, cook them on the stove or roast them in the oven. You can also cook them on the grill in about 10 minutes. Use an instant-read meat thermometer to check that the sausages are cooked to 160 °F (71 °C)—the food-safe temperature for sausages.
Use a meat thermometer to make sure your sausage is between 160 and 165 °F (71 and 74 °C). If you don't have a meat thermometer, check that the sausage is firm and has clear, runny juices. Cut it open and make sure the inside is brown, not pink.
The ideal cooking time for sausage depends on how it's being prepared, a thicker slice of meat will take longer to cook. At 400 degrees Fahrenheit in an oven, sausage takes between 10-45 minutes to cook fully. Thin slices or patties may cook in just 10 minutes, while thicker links can take up to 45.
Arrange sausage links in an even layer, with at least 1-inch in between each link, on prepared baking sheet. Bake in the preheated oven until a thermometer inserted into thickest portion registers 160 degrees F (71 degrees C), about 20 minutes. Serve as desired.
Remove the sausage meat from the packaging. Preheat your oven to 200°C for fan assisted or 210°C for ovens without a fan. Place onto a roasting tin in the centre of the oven. Roast for 30 minutes until the stuffing has a golden crust & thoroughly cooked to a minimum of 72°C.
One of the healthiest ways to cook sausages is in the oven. It's super easy to do, and unlike frying or grilling, baking sausages doesn't require any extra oil.
To cook sausages by frying, heat 1 tbsp oil in a frying pan. Cook the sausages gently in the oil for 10-12 minutes, until thoroughly cooked, turning frequently. Sausages can also be baked in the oven (a good method to use if you're cooking something else in the oven). Preheat the oven to 190°C, gas mark 5.
To prevent foodborne illness, uncooked sausages that contain ground beef, pork, lamb or veal should be cooked to 160°F. Uncooked sausages that contain ground turkey and chicken should be cooked to 165°F.
Cooking sausages in a pan requires regular turning to ensure they cook evenly. You can use a non-stick pan or a cast iron pan to do the job. Pan frying sausages increases their umami flavor. Remember, keep the man on a medium heat so that the sausages don't burn on the outside before they are fully cooked inside.
